Margherita Pizza Toast
4 vine ripe tomatoes
salt and pepper
2 tbsp. olive oil
2 balls fresh mozzarella
bunch of basil
2 large slices of italian bread or focaccia
1. Preheat the oven to 400 degrees. Slice the tomato very thin and place side by side in a baking dish. Sprinkle the tomatoes with salt and pepper and drizzle with the olive oil. Bake for about 20 minutes until the edges brown and curl.
2. Slice the bread about 2 inches thick. Place the cooked tomatoes on top and drizzle the remaining olive oil from the cooked tomatoes on top. Top the tomatoes with sliced mozzarella and bake under the broiler until the cheese starts to melt. Once the cheese is a bit melted, take the pizzas out of the oven and place the basil leaves on top and put back under the broiler until they are crispy and the cheese is bubbly.
3. Let the pizzas cool a bit before serving.
Love these quick and easy pizzas. The caramelized tomatoes are what makes it, they are so sweet and just melt in your mouth! I think adding spinach would be great as well or some caramelized onions………may need to get back in the kitchen!!!
