Sausage, Kale, Lentil and Sweet Potato Soup
2 tbsp. olive oil
1 onion chopped
3 cloves of garlic chopped
1 lb. sausage links sliced
1-2 small sweet potatoes cut in 1/2 inch cubes
8 cups chicken broth
2 bunches of kale
1 cup lentils
salt and pepper to taste
Heat the olive oil on medium high heat and add the chopped onions and chopped garlic, saute until lightly browned. Add the sausage and brown 7-10 minutes. Once the sausage is browned add the cubed sweet potatoes and saute until lightly browned, 2-3 minutes. Add the chicken broth and simmer for about 10 minutes.
Once all the ingredients have simmered, add the kale and cook down for 20-30 minutes. Add the lentils and cook for an additional 30 minutes. Salt and pepper to taste and serve.
I know, it’s August, why am I making soup?? But soup is easy to make and goes a long way. This is definitely a hearty fall and winter soup but we are in the process of selling a house so we are pinching pennies (soup is cheap) and quick when you are making frequent trips out of state every weekend.
So crank up the AC, put on a sweater and enjoy a nice bowl of soup……….yes in August!
