10/7: Tasty Tuesday: Apple, Bacon and Cheddar Grilled Cheese

Serves: 2

1 tart granny smith apple

4 slices of bacon

8 slices of sharp cheddar cheese

4 slices of bread

2 tbsp. butter

2 tbsp. raspberry jam (or any jam of your choice)

Cook the bacon until crispy (I prefer turkey bacon with this recipe but the choice is up to you). Once the bacon is cooked cut in half and set aside. Slice the apple and cheese very thin. Spread butter on one side of each piece of bread and your jam on 1 side of only 2 of the slices, you only want jam on one side of your sandwich. Layer your sandwhiches with the apples on top of the jam, then the cheddar and then the bacon so the cheese melts through all the layers and they stay together. Cook the sandwich on medium high heat, flip once and serve!

Cary and I originally had this sandwich at The Rockford in Raleigh when we were in college. If you are every in Raleigh, or happen to be one of my Raleigh readers GO EAT AT THE ROCKFORD!!! It is amazing! Once we had it we made it over and over again on quick dinner nights and it just became a favorite. I really love it on chilly nights! The sharp cheddar with the tart apple is perfect, and we decided on the raspberry jam, just adds another layer of flavor.
